Disney Culinary Program Alum Creates Signature EPCOT Festival Dish
Only three years out of college, Sam has already achieved a milestone most culinary professionals only dream of—having a menu item of her own creation featured at the EPCOT International Festival of the Arts.
Sam’s interest in the culinary world began in high school when she enrolled in a technical program that gave students real-world experience operating a fullservice catering kitchen. The thrill of seeing people’s positive reactions to her meals was addicting, and it quickly became clear she had a talent for delighting taste buds. Soon, she began competing in baking competitions, earning prize after prize.
Blending her passion and skill, Sam went on to earn her degree in Pastry and Business Management from the Culinary Institute of America before joining Disney in 2023 as a Disney Culinary Program participant at Disney’s Animal Kingdom.
“Joining the Culinary Program made moving to Florida less daunting,” Sam shares. “The Disney Culinary Program also offered the flexibility and opportunity to shadow other food and beverage locations. I was surprised by the vast variety of experiences, locations, and products that Disney offers. I gained experience everywhere from breakfast pastries to fine dining!”
After Sam’s program ended, she accepted a fulltime role in Pastry at EPCOT’s The Odyssey. Today, you can find her newest creation, the Figment Fantasy Cake, on the menu at Figment’s Inspiration Station at the Odyssey!
“Everyone loves Figment, so I imagined what kind of food item he would make or want to eat,” Sam explains. “I associate Figment with a lot of colors, swirls, and shapes, so I created a traditional Swiss roll made of purple sponge cake filled with strawberry whipped cream topped with a white chocolate ganache, orange icing, and white chocolate Figment wings.”
Sam’s advice for those interested in becoming a Disney Pastry Chef?
“Start with the Disney College Program or the Disney Culinary Program to gain experience in the company. Take advantage of your time to network, talk to others, and explore the different opportunities available.”
