From Commis to Executive Chef: An Inspiring Disney Cruise Line Culinary Career Journey

With over 17 years of Disney Cruise Line culinary experience, Girish, currently the Executive Chef for Remy on the Disney Fantasy, is the epitome of career growth. His passion for the culinary arts and hard work led him to rise from his first role as Commis Chef to his leadership position today.
For Girish, his love of cooking began at a young age. “Since I was young, I have always been a good eater, which led me to spend a lot of time with my grandma,” he describes. “Her cooking was amazing and filled with love, and I still try to recreate the dishes she made.”

Inspired by these moments with his grandmother, he went on to attend culinary school in his home country, Mauritius. While in school, he trained at a hotel and was eventually moved to a fine dining restaurant serving French cuisine. “That’s when I fell in love with French cooking, and I decided to delve deeper and learn more about cuisine Française.”
Seeking more experience in the culinary field, he began his career with Disney Cruise Line. He felt that a role at sea would be the optimal way to gain experience while simultaneously traveling the world. Starting as a Commis Chef on the Disney Wonder, he worked his way up to Demi Chef de Partie, then Chef de Partie and by 2015, he joined the culinary team at Remy. There he started as a Chef de Partie, later advancing to Sous Chef before earning his current role.
Girish credits Disney Cruise Line’s dedication to developing crew members for his career success. Girish also found several mentors to guide him along the way.
“Patrick, the Food Manager, and Remy, the Executive Chef, inspired me with their culinary knowledge. Martin and Lisa, both Hotel Directors, demonstrated exceptional leadership skills that exceeded my expectations. Chef Arnaud Lallement inspired me and made me passionate about my job. Additionally, Chef Edward played a significant role in my growth by providing support and guidance.”
It's not just the career growth that keeps talented chefs like Girish working for Disney Cruise Line. The high standards and the level of luxury that come with a world-renowned brand like Disney make for an incredible culinary experience. “The materials and products we offer are exceptional,” Girish tells. “I work with unique ingredients from around the world, including caviar, Miyazaki Wagyu beef from Japan, champagne and truffles. Even though Girish has had an incredible 17-year Disney career, his desire to learn and grow has not stopped, and neither have the opportunities available within Disney Cruise Line culinary. When asked where he sees himself in five years, he says, “I see myself staying connected with Remy in a director role. This means traveling from ship to ship to maintain standards, innovate, improve processes and train and educate the team.”
